Fajitas



One more post today. I mentioned earlier that we were having fajitas for the birthday girl's supper; here are the mouthwatering pictures.


The spread. Fajitas, tortillas, pico de gallo. black beans, chips with salsa and guacamole.

The Meat. From our own cows, cooked by our own Mom.


Chips, pico and salsa. We ate almost every bit of the pico, it is that good.

  2. Fajita Marinade

    12oz beer
    1 c olive oil
    1 onion, sliced
    ¼ c fresh lime juice
    4 large garlic cloves, crushed
    2 tbl Worcestershire sauce
    1 tbl chili powder
    2 tsp cumin
    1 tsp black pepper

    Combine all ingredients and mix well. Pour marinade over meat (leave in large-ish pieces) and refrigerate overnight or up to 24 hrs. Makes enough marinade to marinate 3 lbs flank steak. Grill meat until medium rare, slice and serve with grilled (or fried) onions & bell peppers and condiments.

    [This time we made it with 8 rib steaks, with the meat cut off the bone before marinating. Came out extra tender that way.]
